GRANNY'S COCONUT CAKE 
5 eggs (separate 3)
2 c. sugar
3 c. self-rising flour
1/2 c. Crisco
1 c. milk
1 tsp. vanilla

Mix in conventional method. Folding egg whites into batter last. Bake at 350 degrees. Makes 4 layers.

ICING:

1/2 stick butter
3 c. sugar
1 c. coconut milk
2 coconuts, ground (2 pkgs. frozen coconut can be substituted)

Cook on medium heat until it comes to a boil. Remove from heat. Whip amount of coconut you want to use into icing. Fill and ice cake, add extra coconut on top.
