APRICOT-LEMON DRESSING 
2 1/2 c. mayonnaise
Juice of 2 lemons
2 garlic cloves, minced
1 tbsp. apricot preserves
1 tbsp. Dijon mustard
Lemon peel, grated from 2 lemons
1 tsp. thyme
1 tbsp. honey
Salt & pepper to taste

Thoroughly mix the ingredients and serve on mixed greens or spinach salad.
