GERMAN CHOCOLATE PANCAKES (QUICK
& EASY VERSION)
 
Pancakes:

1 1/4 cups pancake mix (just add water version)
1/2 cup Bisquick mix (approximate measurement, I added an extra tablespoon to make it very rich, but you may want less)
Water (enough to get the right pancake mix consistency - slightly thick)
*sweetened flaked coconut

Butterscotch Topping:

1/2 cup butter, melted
1 1/2 cups powdered sugar
1 teaspoon vanilla
1/4 cup butterscotch chips

Mix pancake mix, Bisquick/Nesquick, and water. Pour into a pan greased with bacon grease. Sprinkle on coconut, to taste, while still wet. When almost dry turn and cook on other side briefly.

Top with a little extra flaked coconut and drizzle on butterscotch topping (sparingly, this is VERY sweet).

Note: I made these as a quick easy way to make them using pre-made pancake mix. You could also adapt this to your favorite from scratch recipe.

Topping:

Heat butter over low heat till melted, add vanilla and butterscotch chips and stir over heat until chips are melted, add sugar and stir until well mixed and smooth. Keep warm until ready to use.
