COCONUT PIE 
This coconut pie is one of the best, and one of the easiest to make.

2 eggs
1 c. sugar
1 c. grated or flaked coconut
1/2 c. melted butter, butter best
1/3 c. milk
1 tsp. vanilla
Unbaked pastry for 8 inch pie

Preheat oven to 325 degrees. Beat eggs lightly. Add sugar, coconut, butter, milk and vanilla. Mix gently. Pour into pie shell and bake for 45 to 50 minutes or until set.

Serves 6.
