STUFFED PEPPERS 
8 med. peppers
1 lb. lean ground beef
1/4 c. onion, chopped
1 1/2 c. croutons
2 oz. (1/2 c.) Mozzarella cheese, shredded
2 oz. can mushrooms, drained, and chopped
2 med. tomatoes, coarsely chopped
1/2 tsp. Worcestershire sauce
1/2 tsp. salt
2 oz. (1/2 c.) Mozzarella cheese, shredded

Cut off tops of peppers; remove seeds and membrane. Precook peppers in boiling salted water for 5 minutes; drain. Generously sprinkle inside of peppers with salt. In skillet, brown 1 pound lean ground beef with chopped onion; drain. Stir in croutons; 2 oz. Mozzarella cheese, mushrooms, tomatoes, Worcestershire sauce, and salt. Spoon into peppers. Place in 10x6x1 3/4 inch bakng dish. Bake, covered, at 350 degrees for 25 minutes. Uncover sprinkle with shredded Mozzarella cheese. Bake 5 to 10 minutes more. 212 calories per serving. Serves 8.
