CHICKEN SCAMPI 
1/2 c. butter
1/4 c. olive oil
1/4 c. finely chopped green onions
1 tbsp. minced garlic
Juice of 1 lemon
2 lbs. chicken breasts, boned, skinned & cut into 1/2" pieces
1 tsp. salt
1/2 tsp. freshly ground black pepper
1/4 c. minced fresh parsley
1 tomato, chopped
Buttered noodles or cooked rice

In skillet, heat butter and olive oil. Saute green onions and garlic. Add lemon juice, chicken, salt, pepper and parsley. Cook for 5 to 8 minutes more, stirring constantly. Add tomatoes and heat through. Serve over buttered noodles or hot rice. Serves 4 to 6.
