CHICKEN SCAMPI | |
Cut up strips of skinned and boned chicken (about 1 pound). Dip chicken in beaten egg. Roll chicken in bread crumbs with garlic salt. Saute 2 to 3 minutes in vegetable oil. Put chicken aside and wipe out pan. Melt 1 stick butter and saute 2 to 3 clove of fresh sliced garlic. Add chicken to frying pan and keep on low heat for 15 minutes (covered). Serve with rice or over linguini noodles. Serves 4. Fast, easy, delicious. |
