BONELESS BAKED SHAD DINNER 
4-5 lb. shad, notched
Bacon
6 green onions, sliced

Season fish inside and out. Place in greased baking pan (Pyrex type). Put onions in notches of fish; turn and fill notches on other side. Place fish diagonal in pan.

Make a batch of hush puppy batter. Fill the fish and that corner of the pan. Slice white potatoes and onions to fill the opposite corner. Salt and pepper to taste.

Lay bacon over all and cover the pan with foil.

Bake in preheated very slow oven, 200 degrees, for 8 hours or at 250 degrees for 6 hours until bones disintegrate.

Serve hot from pan with slaw.
