YAM AND APPLE CASSEROLE 
6 med. yams
3-4 apples, peeled, cored & sliced
1/2 c. butter
3 tbsp. cornstarch
1 c. sugar
1 tsp. salt
2 c. water
2 tbsp. lemon juice

Parboil yams about 20 minutes. Cool, peel and slice in layers in buttered casserole dish, alternating with apple slices. Melt butter in small saucepan. Add cornstarch, sugar and salt. Blend well, then add water. Cook and stir until sauce thickens. Add lemon juice. Pour mixture over yams and apples. Bake at 350 degrees for 1 hour. Yields 8 servings.
