MICROWAVE PEANUT BRITTLE 
2 c. sugar
1/2 c. water
2 tsp. butter
1 tsp. vanilla
1 c. light corn syrup
2 c. salted peanuts
2 tsp. baking soda

Combine sugar, syrup and water in 2 quart glass measuring pitcher. Cook uncovered 6 minutes at high or until sugar is dissolved. Stir in peanuts. Cook 8 minutes on high stirring twice.

Stir butter into mixture and cook to hard crack stage (8 to 10 minutes on high) stir twice. Add baking soda; vanilla, mix well. Pour onto 2 large baking sheets, spreading as thinly as possible.

As soon as candy is cool enough to handle wet hands with water and stretch as thin as desired. Turn candy over and cool completely. When firm and cool, break into pieces. Store in tightly covered container. Makes 2 pounds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
