ALPINE CHICKEN CASSEROLE 
2 c. cooked, cubed chicken
2 c. chopped celery
1/2 tsp. salt
1 sm. onion, chopped
2 tbsp. lemon juice
3/4 c. mayonnaise
1 can water chestnuts
1 can OR 1 lb. fresh mushrooms, sliced
1/3 c. slivered almonds
2 oz. sharp cheese, thin sliced

Mix all ingredients together except almonds and cheese. Place in a casserole dish and place almonds and cheese on top. Cover, bake at 350 degrees for 40 minutes. Uncover and bake 10 more minutes.
