Ripe fruits
Agar (substitute firm Jello)
Crushed ice

Ripe fruits - Young coconuts, mangos, lynchee, cantaloupe, strawberries, apples, pears (fruits should be ripe, but firm).

To Make Syrup: Boil 3 cups water. While stirring, add 3 cups of sugar. Boil for 5 minutes, remove scum. After cooling for about 10 minutes, add flavoring.

Makes approximately 3 cups of syrup. Saccharin may be substituted for the sugar. Dice the fruit and agar/Jello into small pieces (1/4 - 1/3 inch).

Fill glass 1/2 to 1/3 full with solids. Add syrup sparingly. Top with crushed ice. Serve with a long iced teaspoon for stirring/scooping the fruit. Great for hot days.
