LADYFINGER CHEESECAKE WITH
TOPPING
 
2 lg. + 1 sm. pkg. cream cheese
1/2 c. sugar
1 tsp. vanilla
1 pt. all-purpose flour
3 pkg. ladyfingers
Canned fruit for pie filling or use Ladyfinger Cheesecake Topping

Beat cream cheese, sugar and vanilla until well blended. Whip all purpose cream until thick. Add to cheese mixture; beat until smooth.

Line sides and bottom of spring form pan with ladyfingers.

Pour 1/2 mixture in pan; cover with remaining ladyfingers. Add remaining mixture.

Chill.

Add topping.

LADYFINGER CHEESECAKE TOPPING:

Fresh strawberries
1 c. sugar
3 tbsp. cornstarch
1/3 c. water

Mash enough fresh strawberries to measure 1 cup. Mix 1 cup sugar and 3 tablespoons cornstarch in small saucepan. Stir in 1/3 cup water and strawberries. Cook, stirring constantly, until the mixture thickens and boils. Boil and stir 1 minute. Cool thoroughly.
