CHOCOLATE-AMARETTO CHEESECAKE 
1 c. chocolate wafer crumbs
1/4 c. butter, melted
1 (12 oz.) pkg. semi-sweet chocolate morsels
3 (8 oz.) pkg. cream cheese, softened
3/4 c. sugar
3 eggs
1/2 c. amaretto
1 (8 oz.) sour cream
2 tbsp. whipping cream
2 tsp. vanilla extract

Combine chocolate wafer crumbs and butter, mixing well; firmly press into bottom of a 9 inch springform pan. Melt chocolate morsels on top of double boiler (or microwave). Beat cream cheese with electric mixer until light and fluffy; gradually add sugar, mixing well. Add eggs, one at a time, beating well after each. Stir in melted chocolate and beat until blended. Stir in next 4 ingredients. Pour into prepared pan. Bake at 350 degrees for 45 minutes. Let cool to room temperature. Refrigerate overnight. Remove sides of springform pan. You may garnish with whipped cream if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
