CHOCOLATE AMARETTO CHEESECAKE 
CRUST:

1 1/4 c. chocolate wafer crumbs
1/4 c. melted butter
2 tbsp. sugar

Combine and press into bottom and halfway up sides of buttered 9" springform pan. Chill and prepare filling.

FILLING:

16 oz. cream cheese, room temp.
6 oz. semi sweet chocolate, melted & cooled
1/3 c. Amaretto liqueur
1/2 c. sugar
2 eggs
1/2 tsp. almond flavoring
1 tsp. vanilla
2/3 c. sour cream

Beat cheese until smooth, gradually beat in sugar, the eggs, one at a time. Add remaining ingredients; beat at low speed until blended. Pour into prepared pan. Bake at 300 degrees for 1 hour. Turn off heat, leave in oven for 1 hour more. Cool to room temperature. Chill in refrigerator for 24 hours. Add topping.

TOPPING:

2 squares semi-sweet chocolate, melted
1 tsp. melted butter
Whipped cream (opt.)

Melt chocolate and butter. Spread over cake. Garnish with whipped cream, flavored with Amaretto if desired.
