1 1/2 gal. apple cider vinegar
16 c. sugar
2 heaping tbsp. mix pickling spices

Boil this mixture with beets, put in jars. Wash and cook beets (leave root and stems on). Cook until done, peel and cut into pieces. Thirty minute water bath.
