AUNT ANN'S JAM POTS 
2 c. butter
2 tbsp. cornstarch
1 c. powdered sugar
3 1/2 c. flour

FILLING:

Thick jam (flavor of your choice) or 2 jars cake & pastry filling
2 eggs
1 c. white sugar
2 c. coconut

Mix above crust ingredients together and roll into small balls. Press each ball into a tiny cupcake pan, taking the dough up the sides of the pan. Put 1 teaspoon thick jam or cake and pastry filling in the center of crust. (Do not use any more than 1 teaspoon.)

Mix together 2 eggs, 1 cup white sugar, 2 cups coconut. Spoon small amount of this mixture on the top of the jam. Bake at 350 degrees for 25 minutes. Cool before removing from pan. Place each jam pot in a miniature cupcake paper. Makes about 6 dozen cookies.
