ORANGE COCONUT CAKE FILLING &
FROSTING
 
1 1/4 c. sugar
3 tbsp. plain flour
2 tbsp. cornstarch
Pinch of salt
1 c. milk
3/4 c. orange juice
2 tsp. orange rind
2 tbsp. lemon juice
2 eggs, beaten
1 tbsp. butter
Coconut

Use any plain cake recipe or cake mix.

Combine sugar, flour, cornstarch, salt and milk. Cook in top of double boiler, stirring until thick. Add orange juice, rind, lemon juice and eggs. Cook 2 more minutes. Remove from heat; add butter; blend and cool. Add 1/2 cup coconut. Then sprinkle other coconut on top of filling or cake.
