BALSAMIC VINAIGRETTE 
1 clove garlic
1 tbsp. Dijon mustard
3 tbsp. balsamic vinegar
Salt and pepper
Dash of sugar
3/4 c. best quality olive oil

Whisk together all but oil, when well mixed, add oil as you are whisking. This good over Romaine lettuce with walnuts and small chunks of Gorgonzola cheese. You may add a small amount of fresh chopped basil. Always lightly toast nuts to bring out flavor.
