WHOLE GRAIN BANANA BREAD 
4 RIPE bananas
1 1/2 c. sugar
4 tbsp. soft vegetable shortening
2 eggs
1 1/2 c. milk or orange juice
2 tsp. salt
2 1/3 tbsp. baking powder
2 c. unbleached flour
2 c. whole wheat flour
1 1/2 c. oatmeal
1/2 c. wheat germ
1 1/2 - 2 c. raisins
or chopped nuts or
chopped dates or
chopped prunes

Mix wet ingredients well. Mix dry ingredients thoroughly. Add dry ingredients to banana mixture.

Grease loaf pan (9x5x3). Pour the batter into the pan, spreading it higher in the corners with the scraper. Let stand for 20 minutes while oven heats. Bake 1 hour to 1 hour and 10 minutes in 350 degree F. oven. Makes 2 loaves. This is NOT a sweet bread.
