RICE AND SHRIMP CASSEROLE 
1 c. diced celery, saute until tender
2 tbsp. butter
3 c. hot cooked rice
2 c. shrimp, crab, tuna, chicken or combo of 3
3 hard boiled eggs, chopped
3 tbsp. lemon juice
1/2 c. mayonnaise
1/2 can of cream of celery soup
1 (3 oz.) can French fried onion rings

Mix rice, sauteed celery, meat, eggs and lemon juice. Fold in mayonnaise and soup and season to taste. Turn into buttered casserole dish. Top with onion rings or mix in as they tend to get too brown on top. Bake at 350 degrees for 20 minutes. Serves 6.
