MEXICAN PIE 
1 lb. ground beef
1 sm. onion
1 env. taco seasoning mix
1 1/4 c. milk
3/4 c. Bisquick baking mix
3 eggs
2 tomatoes, sliced
1 c. shredded Monterey Jack or cheddar cheese
Shredded lettuce
Sour cream

Preheat oven to 400 degrees. Grease a 10 inch pie plate. Brown beef, add onion and cook until clear, drain and add seasoning mix. Spread in plate. Beat milk, Bisquick mix and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour over meat mixture. Bake 25 minutes.

Top with tomato slices, sprinkle with cheese. Bake until knife inserted between center and edge comes out clean, 8 to 10 minutes longer. Cool 5 minutes. Serve with sour cream and lettuce. 6 to 8 servings.
