QUICK CHICKEN GUMBO SOUP 
4 tbsp. butter
1 onion, chopped fine
1/2 green pepper, chopped fine
1 1/2 c. cooked or canned okra
4 c. chicken stock
2 1/2 c. cooked tomatoes (pine cone tomatoes)
1 sm. bay leaf
1 tbsp. parsley
1 c. cooked chicken, finely diced
1 c. cooked white rice

Melt butter and saute onion, pepper and okra until golden. Add rest and simmer 1 hour.
