TIM'S HEALTH MUFFINS 
2 1/2 c. whole wheat flour
2 c. ANYTHING (oats, corn meal, flour, bran, etc.)
1/2 c. honey OR brown sugar
3 tbsp. baking powder
5 egg whites
1/2 c. butter, melted

OPTIONAL: A cup or two of raisins, prunes, apple, or other fruit and maybe some nuts can be added.

First mix dry and wet ingredients separately. Then mix together. Pour into muffin pans. Bake at 425 degrees for 15 minutes. Yield: 1 dozen muffins.
