EASY MANICOTTI 
4 c. spaghetti sauce
1/2 c. water
1 pkg. manicotti shells, uncooked

FILLING INGREDIENTS:

1 pt. cottage cheese
1 egg, slightly beaten
1 tbsp. onion, minced
1/2 c. Parmesan cheese, grated
1/2 c. Mozzarella cheese
1/2 tsp. basil
1/2 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. pepper

Heat sauce with water. Cover bottom of a 9 x 13 inch baking pan with 1 cup sauce. Mix filling ingredients and fill the uncooked shells. Blend any leftover filling with remaining sauce. Arrange shells in baking dish, leaving room for expansion. Cover with remaining sauce. Cover tightly with foil. Bake at 375 degrees for 1 hour.
