CHEVRE POCKETS 
1 1/4 c. flour
1/2 c. butter
5 oz. chevre (goat cheese)
Scallions
Sm. log of chevre
1 egg, beaten

In a processor or by hand, mix until pastry forms a ball, using first 3 ingredients. Refrigerate to chill, then roll out to 1/8 inch thick. Use a cookie cutter (round 3 to 4 inch). Mix chopped scallions with remaining chevre. Season to taste. Put teaspoon of chevre mixture in circle of dough, fold to enclose. Moisten edges with water and seal. Brush with egg. Bake at 375 degrees until golden on cookie sheet.
