CANDIED WALNUTS 
2 lbs. walnuts
4 c. boiling water

Add nuts, boil 2 minutes. Drain and rinse (hot water). Put back in saucepan. Add 2 cups sugar, stir well to coat nuts. In fry pan, put enough oil to cover half of nuts (do half of nuts at a time). Let oil come to almost a boil. Fry until brown, take out of oil with slotted spoon, put on wax paper. Let cool. Break into pieces.
