PEANUT BUTTER COOKIES 
1/2 c. reduced calorie tub butter
1/2 c. sugar
1/2 c. packed brown sugar
1/4 c. egg sub. or 1 egg
3/4 c. peanut butter
1/2 tsp. vanilla extract
1 1/2 c. flour
1 1/4 tsp. baking powder

Preheat oven to 350 degrees F. Spray 2 large cookie sheets with non-stick spray. In large bowl beat butter and sugars. Stir in egg substitute. Mix until well blended. Stir in peanut butter and vanilla until well combined. Mix flour and baking powder in small bowl. Add to butter mixture and combine completely. Roll dough into 48 equal balls and place 3 inches apart on cookie sheet. Press top of cookies with a fork. Repeat in opposite direction. Bake 12 to 15 minutes. Cool.
