PEANUT BUTTER CUPCAKES 
1 pkg. yellow cake mix
1 c. chunky peanut butter
1 1/4 c. water
3 eggs
1 tub ready-to-spread frosting, chocolate or milk chocolate

(Or 1 cup creamy peanut butter and 1/2 cup chopped peanuts).

Heat oven to 350 degrees. Line muffin cups with paper cups. Beat all ingredients except frosting in large bowl on low speed for 30 seconds, scraping bowl constantly. Beat on medium speed for 2 minutes, scraping bowl occasionally.

Fill baking cups 1/2 full. Bake until tops spring back when lightly touched in center; about 15-20 minutes. Cool 10 minutes, then remove from pan; cool cupcakes completely. Frost with frosting and sprinkle with chopped peanuts if desired. Makes 36-42 cupcakes.
