PARKER HOUSE ROLLS 
1 c. milk, scalded
2 tbsp. shortening
1/4 c. sugar
1 tsp. salt
1 pkg. dry yeast dissolved in 1/4 c. warm water
1 egg, well beaten
3 1/2 c. flour

Combine and cool to lukewarm scalded milk, shortening, sugar and salt. Add dissolved yeast and beaten egg to milk mixture. Gradually stir in 3 1/2 cups flour. Beat vigorously until mixed well. Dough will be a little sticky. Put dough into a greased bowl and let rise until double in size. Roll dough on floured surface. Cut with biscuit cutter. Fold over with butter inside.

Let rise. Bake at 400 degrees for 10 to 15 minutes.
