PARKER HOUSE ROLLS 
1 c. milk, scalded
2 tbsp. shortening
2 tbsp. sugar
1 tsp. salt
1 pkg. dry yeast
1/4 c. lukewarm water
1 well beaten egg
3 1/2 c. flour

Combine milk, shortening, sugar, and salt; cool to lukewarm. Add yeast softened in water. Add egg. Gradually stir in flour to form soft dough. Beat vigorously; cover and let rise in warm place until double in bulk (2 hours). Turn onto floured board. Knead a few times. Roll dough to 1/2 inch thickness. Cut with round cutter. Dip in melted butter. Fold in half and place on cookie sheet. Rise to size desired. Bake at 350 degrees until golden brown.
