BANANA ICE CREAM 
3 junket tablets
3 tbsp. cold water
4 c. light cream
1 1/2 c. sugar
6 bananas, mashed
2 tbsp. lemon juice
1 1/2 c. heavy cream, lightly whipped

Dissolve the tablets in cold water. Heat light cream and sugar until lukewarm, add the tablet mixture and let stand at room temperature for 10 minutes. Add lemon juice to mashed bananas and add to cream mixture, then add heavy cream, put into ice cream freezer. Freeze. Makes 1/2 gallon.
