CHERYL'S BEST MEATLOAF | |
1 1/2 lb. ground beef 1 cup tomato juice 2/3 cup dry bread crumbs 2 beaten eggs 1 tsp. salt 1/2 tsp. pepper 1/4 cup grated onion 1/4 cup green peppers Mix ground beef, tomato juice and bread crumbs gently with fork until all juice is absorbed. Add remaining ingredients. Shape into loaf and place in loaf pan. Bake at 350°F for 1 hour. TOPPING: 3 tbsp. brown sugar 1/4 cup ketchup (Hunts) 1/4 tsp. nutmeg 1 tsp. dry mustard Mix topping together and spread on top of meatloaf and return to oven. Bake an additional 30 minutes.
