FISH STEW 
2 tbsp. oil
1 lg. onion, chopped
1 lg. green pepper, chopped
1 lg. yellow, red, or orange pepper, chopped
6 cloves minced garlic
1/2 bunch cilantro
16 oz. can tomatoes
1 1/2 c. chicken broth
1/2 c. white wine
8 oz. clam juice or clams
3 chicken bouillon cubes
1 tbsp. basil
1 tbsp. oregano
1 tbsp. thyme

Heat oil in 5 quart pot. Add onion, peppers, garlic, and cilantro. Cook until vegetables are tender. Add rest of ingredients. Simmer covered for 15 minutes. Add 2 pounds boneless halibut, which has been cut into bite size pieces. Bring to a boil, reduce heat, simmer 6-8 minutes.

Serve with 2/3 cup mayonnaise, 2 cloves garlic minced, 1 teaspoon cayenne pepper, 1 tablespoon white wine vinegar. Use this as a topping/garnish.
