LIGHT BARBECUED CHICKEN | |
1/2 c. finely chopped onion 1/4 c. firmly packed brown sugar 2 tbsp. cider vinegar 2 tbsp. prepared mustard 1 1/2 tsp. chili powder 1 tsp. Worcestershire sauce 1 lg. clove garlic, minced 1 (13 1/4 oz.) bottle of reduced calorie catsup 8 (6 oz.) skinless chicken breasts, halved Combine first 8 ingredients in a saucepan; stir well. Bring to a boil over medium heat; cover. Reduce heat, and simmer 20 minutes. Coat a grill rack with cooking spray; place over medium hot coals. Place chicken, bone side up on rack; cook 10 minutes. Turn chicken and coat with sauce. Cook 40 minutes or until chicken is done, turning and basting every 5 minutes. About 200 calories per chicken breast half. |
