CARROT CAKE 
2 c. flour
2 c. sugar
1 scant c. oil
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
1 tsp. walnut flavoring
4 eggs
2 c. grated carrots
1 c. chopped walnuts

Combine first 8 ingredients thoroughly. Add carrots and walnuts, mixing well. Bake in 10 inch tube cake pan or 2 loaf pans at 350 degrees for about an hour.

GLAZE:

1 c. sugar
1/2 tsp. baking soda
1/2 c. buttermilk

Combine in saucepan and bring to boil. Pour over cake while it is still in pan and still hot.
