PASOLE' OR CHILE BEANS 
4 lbs. lean pork ribs
2 qt. of water
2 tbsp. of lard
1 lg. onion
4 cloves garlic, crushed
1 pinch of cumin
1 tsp. oregano
1 lb. of hominy, canned (drained)
6 c. cooked pinto beans
1 1/2 c. red chile sauce
Salt as needed

Parboil the ribs. Meanwhile, saute onion and garlic with the cumin and oregano. After meat has become tender, add the red chile sauce with the hominy and beans. Continue to cook slowly on a low heat as it gets better as it ages as well.
