RHUBARB COBBLER 
BASE:

1 c. sugar
1/3 c. pancake mix
9 c. rhubarb, diced

TOPPING:

3/4 c. pancake mix
2/3 c. sugar
1 egg, beaten
1/4 c. butter, melted

Combine all of base ingredients together and place in a 9"x13" pan.

Combine topping by mixing all but butter together to resemble coarse crumbs. Sprinkle over base and drizzle butter over all. Bake at 350 degrees for 40 to 45 minutes or until rhubarb is done.
