FRESH MUSHROOM SALAD | |
1/4 c. canned no salt added chicken broth, undiluted 1 tbsp. minced fresh parsley 1 tbsp. minced fresh basil 3 tbsp. lemon juice 1 tsp. olive oil 1/2 tsp. ground cumin 1/4 tsp. freshly ground pepper 1 clove garlic, minced 1 1/2 lbs. fresh mushrooms, quartered, button mushrooms are best Fresh basil springs (optional) Combine first 9 ingredients in a large bowl. Add mushrooms, toss gently. Cover and chill at least 2 hours, tossing occasionally. Garnish with fresh basil sprigs. Makes approximately 12 servings. |
