COUNTRY SAUSAGE AND POTATOES AU
GRATIN
 
1 lb. smoked sausage
1 lg. onion, chopped
1 tbsp. vegetable oil
1 pkg. Au Gratin potatoes
2 1/2 c. hot water
1/4 tsp. pepper
4 med. carrots, cut in 2 inch strips
1 pkg. broccoli stems, thawed and drained
1 c. shredded cheddar cheese

Cut sausage into 1/2 inch pieces. Cook and stir sausage and onion in oil until the onion is tender. Add carrots and cook about 10 minutes. Stir in broccoli, the package of potatoes and sauce mix, water and pepper. Heat to boiling. Reduce heat and simmer until tender. Stir in cheese, cover and cook until the cheese is melted (5 to 10 minutes). Serves 6. Good!
