SUNDAY MEATLOAF 
3 lbs. lean ground beef
2 eggs
2 envs. spatini
1 can Italian stewed tomatoes
1 onion, diced
Salt and pepper to taste

In roasting pan, mix ground beef, eggs, spatini, onion, and 1/2 can of tomatoes. Shape into oblong loaf. Pour remaining tomatoes on top of meatloaf. Bake, covered, at 350 degrees for 50 minutes. Uncover and continue baking for 15 minutes. Remove from roasting pan and let sit for 5 minutes on serving platter. Slice.
