SUNSHINE SALAD 
5 c. (packed) spinach leaves, washed and dried
1/2 red onion, sliced thin
1/2 red pepper, sliced
3/4 to 1 whole cucumber, sliced
2 oranges, peeled and chopped into bite size chunks
1/3 c. bottled "lite" vinaigrette dressing
(15 calories per tbsp. or less)

Toss altogether in large bowl. Add dressing and toss again. Serve immediately. Makes 5 small servings.
