PETITE CHEESE TARTS 
16 oz. cream cheese
1 can fruit pie filling or homemade
2 eggs
1 tsp. vanilla
3/4 c. sugar
1 tbsp. lemon juice (fresh is best)
1 box vanilla wafers

Mix first 5 ingredients until smooth. Line 36 muffin cups with papers. Place a vanilla wafer in each and fill with cheese mixture 2/3 full. Bake at 350 degrees for 20 minutes or until firm to the touch, not brown. Cool. Top with fruit fillings when ready to serve.

These may be frozen or they keep well in refrigerator up to 2 weeks.
