QUICK PIGS IN THE BLANKET 
1 sm. head cabbage
1 lb. ground beef
1/2 c. chopped onion
1/2 c. rice
1/2 tsp. salt
1/4 tsp. pepper (optional)
1 (10 1/2 oz.) can tomato soup
1 1/2 c. water
1 sm. shredded Mozzarella cheese

Chop cabbage into medium pieces and spread in bottom of a greased 9x13 baking dish. Brown hamburger and onion, breaking up the meat as it cooks. Stir in rice, salt, and pepper. Spoon over cabbage.

In small saucepan heat soup and water to boiling point. Pour over all ingredients. Sprinkle with cheese. Cover casserole tightly with foil. Bake for 1 1/2 hours in preheated oven at 350 degrees.
