FRIEDA'S ORIGINAL RHUBARB
PUDDING
 
6 c. rhubarb
1/2 c. white sugar
1/2 tsp. cinnamon
1 c. flour
1 c. sugar
1 tsp. cinnamon
1/2 tsp. baking powder
2 eggs
1/2 c. melted butter

Put rhubarb in 9 x 13 inch pan. Mix 1/2 cup sugar with 1/2 teaspoon cinnamon and pour over rhubarb. Mix together flour, sugar, 1 teaspoon cinnamon, and baking powder. Add 2 eggs and 1/2 cup melted butter. Pour over rhubarb. Bake for 40 minutes at 350 degrees.

Option: You can add 1/2 cup coconut and 1/2 cup nuts. Mix and drop over rhubarb. You can use any kind of fresh fruit.
