RHUBARB PUDDING 
1 1/2 c. sugar
1 tsp. baking powder
1/4 tsp. salt
1 c. flour
1 egg
1/2 c. milk
1/2 stick butter
3 c. diced rhubarb

Combine 1/2 cup sugar, baking powder, salt and flour; mix well. Add egg and milk. Blend into flour mixture. Melt butter in baking dish (8 in. to 9 in. pan). Add flour mixture. Do not stir. Add 1 cup sugar to diced rhubarb. Drop by spoonfuls on top of flour mixture (do not stir).

Bake at 375°F for 30 minutes.
