FETTUCINI, BACON, MUSHROOM AND PEAS SAUCE | |
8 oz. any pasta (we used fettucini) 1/2 lb. mushrooms, each cut in half 2 tbsp. flour 1 c. milk 1/4 tsp. pepper 1/2 c. grated Parmesan cheese 4 slices bacon, cut into 1" pieces 2 green onions, sliced 1 c. half and half 1/2 tsp. salt 1 (10 oz.) pkg. frozen peas, rinsed with hot water to thaw 1. Prepare pasta conventionally as package directs; drain. 2. Meanwhile, in 3 quart casserole, cook bacon on High 4 minutes, stirring occasionally until crisp. With slotted spoon, remove bacon, drain on paper towels. 3. Add mushrooms and green onions. Cook on High 2 minutes. stir in flour, then add half and half, milk, salt and pepper; cook, covered, 8 to 10 minutes until sauce thickens, stirring occasionally. Stir in peas. Cook on High 1 to 2 minutes until peas and sauce are heated. 4. Toss sauce, Parmesan cheese and bacon with pasta. Makes 4 main dish servings. About 580 calories per serving. |
