CHOCOLATE MOUSSE 
2 squares chocolate
3 tbsp. powdered sugar
3 tbsp. strong brewed coffee
2 to 3 egg yolks
1 1/4 c. whipping cream

Melt chocolate in a double boiler or in microwave. Stir in sugar, coffee and egg yolks, one at a time.

Stir until mixture has thickened. Remove from stove. Allow to cool. Whip cream to stiff peaks. Combine with cooled chocolate mixture.

Spoon the mousse into individual serving dishes. Cover. Allow to cool in refrigerator for 1 hour.

Garnish with a spoonful of whipped cream.

Serve with sherry or other sweet wine.

Don't sllow the water to boil when melting the chocolate.

Since microwave ovens vary in power, you may need to adjust your cooking time.
