PORK CHOP SUEY 
6 lb. lean pork
4-1/2 qt. stock
3 c. sliced onion (1-1/4 lb.)
2 tbsp. salt
1/4 c. sugar
1 c. cold water
1/2 c. fat or oil
2-1/2 qt. cut celery (2-1/2 lb.)
3 c. bean sprouts (1-1/2 lb.)
1/2 tsp. pepper
1-1/2 c. cornstarch
1 c. soy sauce

Cut pork into 2 inch strips and brown in oil. Add stock and simmer 30 minutes. Add vegetables and spices. Make a paste of the cornstarch and water and stir into mixture. Cook for 30 minutes on low heat and stir frequently. Add soy sauce and serve on rice or Chinese noodles.
