BRENDA'S EASY MEATBALLS 
Great with mashed potatoes, green beans and biscuits or rolls.

MEATBALLS:

2 lb. ground beef
2 cups shredded cheddar cheese
1 long sleeve saltine crackers
2 eggs
enough milk to moisten

Crush saltine crackers and put in a bowl. Add 2 eggs and enough milk to moisten crackers. Mix well and set aside to soften crackers.

Add ground beef to a large bowl. Add shredded cheddar cheese. Add in cracker mixture. Roll into balls the size of a golf ball.

Place on baking pan with sides and bake at 350°F for 30 to 40 minutes until nicely browned. Pour off grease.

SAUCE:

1 (32 oz.) bottle ketchup (I prefer Hunts but store brand is OK)
1 onion, chopped
4 tbsp. vinegar
6 tbsp. brown sugar

Pour ketchup into a large stockpot. Add chopped onion, vinegar and brown sugar. Simmer while meatballs are baking. Add meatballs to sauce and stir to cover all meatballs. Enjoy!
